Blueberry Oatmeal Muffins

Another way to keep warm during a Canadian cold spell is to bake warm, tasty treats.  That’s what I did today.

You’ll need 1 cup of quick oats, 1 cup of milk, 1 egg, 1/4 cup of vegetable oil, 1/3 cup of sugar, 2 tsps of baking powder, 1/2 tsp of salt, 1 cup of flour and 1 cup of blueberries (fresh or frozen*).  Because I’m using frozen berries and they tend to hold more liquid than fresh, I added a tblsp of flour to them and added them separately.

Hint: I add the blueberries separately because I want blueberry muffins, not blue muffins.  😀

First, in a large mixing bowl, add the oats to the milk and let sit for about 10 to 15 minutes, as seen in the above photo.

To that, add the egg (beaten), the oil and the sugar, mixing thoroughly.

Next, add the flour, baking powder and salt and gently combine the ingredients.  DON’T OVER STIR.  Mix just until the ingredients are combined.


Fill the muffin tin sections only a quarter of the way full and then by hand add a few blueberries to each.  Add another spoonful of muffin mix on top of each one.

Next, sprinkle more blueberries on top and bake in a preheated 425 F oven for about 12 -15 minutes or until lightly brown on top.

Remove from oven and let cool slightly before serving.  Mmmmmmmmm.

Notice how the muffins aren’t blue?  They would have been had I added the blueberries directly to the mix.  Clever, no?
