Though it’s warmed up some, thank goodness for small miracles, it’s still very much winter around here and I found myself baking up another batch of warm and yummy goodness this morning. As you can see by the pic, three disappeared before I got out my camera. Mice! (No, not really…just me and Daughter. I’m sure another three will disappear as soon as Hubby gets home.)
To make these you’ll need:
2 1/2 cups of grated zucchini
2/3 cup of melted butter
2 eggs, beaten
1 cup of sugar
2 cups of flour
2 tsp of vanilla
2 tsp of baking soda
2 tsp of cinnamon
1/2 tsp of nutmeg
1/4 tsp of salt
Optional: 1 cup of walnut pieces, 1 cup of dried cranberries and 48 – 1/4″ cubes of cream cheese (4 pieces per muffin).
Here’s what you do:
Preheat your oven to 350 F.
In a large bowl mix the sugar, eggs and vanilla until well combined. Add the zucchini and melted butter and stir well. Add the salt and baking soda and incorporate.
In a smaller bowl mix the flour, cinnamon and nutmeg until well mixed.
Mix the dry ingredients (in thirds) to the wet and mix well. Add the walnuts and cranberries stirring gently but be sure to not over mix the batter. Muffins are funny that way.
Fill buttered or paper lined muffin cups half way and then add two cubes of cream cheese to each cup. Fill up muffins cups until they are full. (They should be heaping.) Add two more cubes of cream cheese to each one.
Bake for about 25 – 30 minutes until muffins are golden brown.
If you’ve never heard of using zucchini to bake, you’re not alone. This is a relatively new idea for me and the first time I’ve ever tried it but if you like banana bread or muffins, these are very similar.

Phew! I’m exhausted. It’s been non-stop sorting, purging and cleaning for a good week straight.
Hubby asked where he was when Martha Stewart possessed me. He was quick to add that he’s not complaining, he’s just finding it amusing to see me clean like I did when I was “nesting” with Daughter. Added bonus is that I’m not pregnant. 😀
I could just keep at ‘er until I fall over but I’ve decided it’s time to slow down, set a pace and work on one of my favourite projects…To Do Lists!
Every room in the house still has things that need to be done from the little touch ups in the bathroom to full out overhaul in the kitchen. My plan is tackle these chores one room at a time until they’re done, starting with the easiest of course. 😉
My goal is to have the inside done by mid Spring so that when the snow melts and it’s time to start working outside I can focus my attention there. I really can’t wait to muck about outside in my gardens and find out what’s going to come of all the bulbs I planted in the fall.
I also can’t wait to have another go at a vegetable garden. So far we’ve only managed successfully growing cucumbers, beans and tomatoes. Not bad, but after last year’s cabbage, carrot and radish fiasco we did get a little daunted.
This year, in addition to what we know works, I want to try zucchini and rhubarb. Mmmmmm.
Okay, see why I have to slow down and set a pace? I’ve been moving so fast this last week that I’m finding it hard to stop the whirling dervish motion. I just want to keep going until every last little thing is done.
But I know that if I don’t stop to enjoy the fruits of my labour; just sit quietly in my new space, relax in a bath in the redone bathroom, sit at the dining room table and just enjoy the uncluttered and dust free view, it really would be all for naught.
I’m not doing this for merely the sake of having a clean house…anymore. Now I’m doing it for the sake of my soul and to keep up how good it has felt to focus on my family, my space and my dreams.

Part of me wishes I had pictures for this post, part of me is relieved that I don’t.
On the one hand it would be very telling about how much work I’ve actually done and on the other equally as telling, and quite embarrassing, about how poor a housekeeper I have been.
I used to be a neat freak…honestly.
When it was just me and Son living on our own, my apartment was always clean and tidy. I had a very regular routine that made it virtually impossible for clutter to build up. I suppose it did help that we lived below the poverty line and I couldn’t afford to buy much other than necessities.
Nonetheless, over the years as we added Hubby and then Daughter to the mix I had less time to worry about pristine housekeeping and more money to collect stuff. Of course at first, most of the stuff collected was for the kids but eventually I started buying craft supplies, fabric (so much fabric) and trinkets just for me.
Anyway…my point, if I have one, is this. I’ve spent the last week peeling back the layers of stuff to find more stuff. Once I’ve gotten through all the stuff and brush off the dust that’s collected on all that stuff, I find more dust.
Once I’ve cleaned up all that dust, I’m finding dirt and not just the on top kind but the ground in stuff too.
The weird thing is that as much as I loathe getting on my hands and knees to scrub away at the ground in stuff, I’m finding it extremely therapeutic to do so. Despite it being tedious and somewhat gross to get up close and personal with the cat hair, dust and miscellaneous bits of rubbish that have collected along my baseboards, I just feel so damned accomplished once it’s done.
Am I weird?

Instead of a play by play of each of my goals, this week I’m just going to let you all know about how my personal space project is going. It’s going, well…awesome! I’m not quite done yet what with putting away my fabric, going through some small baskets of fiddly bits and a desperately needed vacuum.
And what I’ve got is not fancy by any means. What it is though, is mine…
A small vanity for a writing desk to practice my script. I LOVE writing by hand, seeing it as much art as practical, and I’ve recently started trying my hand calligraphy.
A hutch and filing cabinet for miscellaneous storage. Oh, also a cat bed and a really out of date globe.
Finally, the table where most of my time will be spent. Perfect for sewing, crafting and using my laptop it is the highlight of my space.
There you have it. This is what I’ve spent my week doing. What I’ve realized though it does actually contribute to my achieving all my Project 2011 goals.
I’ve gotten plenty of exercise, I’ve made room to work on my novel, I’ve created my very own space (if that’s not pampering, what is?), I haven’t even thought of writing a poem this week and I was kind to myself by committing to it and not giving up.
I hope everyone has had an equally satisfying week. 😀

I’m fully immersed in this sorting, purging and organizing kick I’m on.
In the last four days, no room in the house has been left untouched by a least taking something out, straightening up and a bit of a dust…some rooms more than others. As it is, I want to live in my bathroom because it’s the only room that’s completely done.
If anything, I’ve definitely got a head start on Spring cleaning. I’m also even more keen to get started on updating the kitchen. So many projects, so little time.
Tomorrow is Project 2011 update and I’m hoping to have some pics of my “just for me space”. I’ve still got some work to do before I’m ready but barring anything unforeseen, I should be good to go.

I’ve really hauled ass today and got way more done than I ever would have expected I could. I’m rather proud of myself, especially since I’ve been such a whinger lately.
Anyway, so far…
I’ve turned the dresser I inherited from a friend’s daughter (really, I didn’t put the Tinkerbell stickers on myself) into my crafty space. Here I’ve got paints, brushes, glue guns, permanent markers etc. I think I’m going to buy two more of those drawers thingys I’ve got on top. They’re handy. Oh, and excuse Pin Pig…I have no idea why he’s mooning the camera.
Other than get that sorted, I’ve pretty much just made a big mess with books, half sorted through boxes and miscellaneous garbage strewn about the place. I’ll spare you a pic of that.
What I will show you pics of though is the bathroom updo we did. Okay Hubby did the hard work and actually prepped and painted the room.
We actually have had the wallpaper up for a while, we just needed to paint the walls and the new border. Like I said, Hubby did all that and when the second coat was dry today I put the room back together.
Though Spring is still many weeks away, I think I’ve made it over the worst of my winter blues. Much to everyone’s relief…well, around here anyway. 😉
